It must be said that in Spain there are different types of Cured Ham of different qualities, amongst which the Teruel Denomination of Origin Ham, can be found, completely controlled and guaranteed by its Regulating Board, which establishes conditions of production, origin of raw material, and its preservation.

Industrias Alimenticias Jalonca, located in Calamocha (Teruel), produces solely and exclusively Teruel denomination of Origin Ham, a slow curing process ham which never leaves whoever has the pleasure of tasting the same indifferent.

Currently Jalonca processes around 370 tonnes annually, the equivalent of 45,000 Teruel Denomination of Origin Cured Ham per year.
