Founded in 1990 by the Mercadal family, Jalonca Food Industries, S.L. (Industrias Alimenticias Jalonca, S.L.) has maintained a long and experienced history solely based and exclusively on the production, testing and improvement of D. O. Teruel cured ham.

A previous butcher shop and a curing factory gave rise to I.A. JALONCA in Calamoncha. The sites were reformed and adapted in order to create a production plant with approved modern facilities to export to the EEC and Japan.

The labor and effort focused on the daily improvement of the quality of Jalonca ham was recently recognized by receiving the "Primer Premio al Jamón Denominación de Origen Teruel
