After maturing is over, Jalonca checks every ham to verify that it will offer a great aroma to the consumer.

Also, the Rules Council of D.O. Teruel confers a final certification according to the dryness of each ham. Once a ham passes quality control, it is branded with the trademark D.O. Star and the corresponding numbered band.

From this moment on, D.O. Teruel Ham can be deboned, sliced and vacuum-packed according to the different products.
