It is clear that in order to have high-quality cured ham, the first thing to keep in mind is the quality of the raw commodity.

All Jalonca Ham comes from pigs that are grown and fed on very controlled farms whose performance guidelines are governed by the same Denomination of Origin.

Therefore, Jalonca's facilities receive fresh ham straight from the butcher shops and quartering houses especially approved by the company.
